Help!

We are planning to make Italian food for dinner on Christmas Eve and I could use some help with ideas.  Does anyone have any great recipes for Italian food, ideas for side dishes, salads, etc.?  I have a million cookbooks on the shelf but thought I might try you guys first.

Lasagna is a family favorite at our house - I make the one where you don't have to cook the lasagna noodles before you bake it. Let me know if you want the recipe. Add a tossed salad, some garlic bread, a little vino and you're good to go.

No-Cook-The-Noodles Lasagna

Note that this recipe is not an exact science as I never make it the same way twice!

About 2# meat - I usually use a mixture of turkey sausage and/or ground turkey and/or ground beef - your choice but I like the spiciness of the sausage. I cook it with a large onion that's chopped up and plenty of garlic.

1 large jar spahgetti sauce - your choice - or make your own! Add the sauce to the meat mixture (after you drain the meat) and that's your meat layer. I like to also add a can of diced tomatoes (don't drain) for texture along with mushrooms and grated carrots. You don't want it to be super thick because the noodles are going to absorb some of the liquid.

For the cheese layer, I mix a large carton of cottage cheese with a large package of grated mozarella cheese and an egg and some Italian seasoning.

This recipe makes a boatload of lasagna so I usually get out a 9X 13 plan plus a smaller one and if we don't eat the smaller one, I freeze it for later.

Start by putting a layer of meat sauce in the pan, cover with uncooked lasagna noodles, then 1/2 of the cheese mix, 1/2 of the meat sauce that's left, another layer of noodels, the rest of the cheese mixture, the rest of the meat sauce.

Bake at 350 for about an hour and 15 minutes or until bubbly (whatever the hell that means) - cover it with foil while it cooks. Then take out of the over and let stand with the cover off for about 15 minutes and sprinkle parmesan cheese over it.
